As we move into autumn and reflect on the season just passed, it's fair to say that summer brings a unique magic to the Ashford Estate, and this is no more evident than in the bountiful seasonal offerings we are blessed to put to delicious use in our kitchens.
Travelling through the West of Ireland, our Executive Chef Liam Finnegan visits John O’Sullivan of Derreighter Farm in Galway, where organic blueberries grow in abundance; Michael Flanagan of Velvet Cloud in Mayo, producers of handcrafted sheep’s yoghurt; and Steve Watson, who cares for Ashford Castle’s own beehives across the estate here in Cong.
